Healthy Flaxseed Pancakes

Healthy, delicious, and can be made sugar free! Skip the boxed pancake mix and try out this homemade recipe instead.

Healthy Ingredients

It is surprisingly easy to make homemade pancakes from scratch. With the right ingredients, pancakes are a great way to add some extra fiber, protein, and nutrients into your meals for kids and the whole family. This recipe does have some more unique ingredients (almond flour, chia seeds, flaxseed) which you can skip or substitute based on your pantry. With a little syrup or fruit topping though, the extra add ins don’t change the taste significantly and offer some bonus nutrients.

Easy Tip: If you don’t have time to make the whole recipe from scratch, try adding in healthy extras to a boxed mix instead. Ground flaxseed is a great, mild ingredient to start with that adds healthy omega-3 fatty acids and fiber.

Ingredients

Notes: A 1:1 ratio of almond flour and white whole wheat flour provides a tasty pancake texture, but the flour can be substituted based on what you have in your pantry. Also, this recipe does not include sugar in the batter. If you prefer a sweeter recipe, add 1 tablespoon of maple syrup.

Dry Ingredients

  • 2 cups flour (1 cup super fine almond flour, 1 cup white whole wheat flour)
  • 2 tsp cinnamon
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 tablespoon chia seeds
  • 2 tablespoons ground flaxseed

Wet Ingredients

  • 2 eggs
  • 2 cups milk (1 cup almond milk, 1 cup 2% milk)
  • 2 tsp vanilla

Directions

  1. In a large mixing bowl combine the dry ingredients.
  2. In a separate bowl whisk together the wet ingredients.
  3. Pour the wet ingredients into the dry ingredients and combine until mostly smooth (small lumps are normal). The batter should have a nice medium consistency when mixed, not too runny and not too thick. It will thicken up over time due to the chia seeds and flaxseed, so add a little water or milk as needed.
  4. Heat in a pan lightly coated in cooking spray on low to medium heat. Flip after bubbles appear and start to pop.
  5. Enjoy warm with some fruit topping or maple syrup.
